• 2 Eggs / or Chia eggs (2 spoons of chia and 6 spoons of water)
  • ½ cup oats
  • 1 Tbs of coconut oil
  • a splash of nut milk ( I like coconut or almond)
  • Pinch of salt
  • Pinch or cinnamon
  • maple syrup, to serve (optional)
  • fresh fruit of your choice, to serve
  1. Mix all the ingredients well, add milk last so that you can get a good texture. Optionally you can put in your blender for a smooth texture.
  2. Heat a non-stick frying pan over medium heat and fry your pancakes until golden.
  3. Serve with a drizzle of maple syrup and fresh fruit of your choice
